Puffed Pancakes

Take 2 round ceramic baking dishes, coat with butter and then coat with granulated sugar. Take 2 jumbo eggs, beat well, add 1 cup of eggnog and mix well. Add 1 cup of all purpose flour, 1/4 tsp salt and mix until a smooth and creamy mixture. Add 1 Tbl. B&B Liquer and mix well.

Pour into ceramic dishes and place in preheated oven (450°) on top shelf. Bake for 15 minutes. Reduce to (400°) and bake approx. 5 more minutes (until golden brown).

While pancakes are baking slice 1 large golden delicious apple and sauté in 1 Tbl butter (do not let butter burn) a couple of minutes on high constantly turning apple slices. Add 1 tsp of vanilla and toss in with apple slices. Put a bed of syrup on serving plate, place pancake on top and sprinkle with powdered sugar. Finish with apple slices topped with whipped cream and a long stem cherry!
