Banana's Foster Pancakes

Bananas Foster Syrup

Combine in pot away from stove:

2 sticks of butter (1cup)

1 box dark brown sugar (2 cups packed)

½ tsp vanilla butter nut

1 cup Karo Syrup

½ tsp cinnamon

2 oz banana liquor

¼ cup light rum

1 egg well beaten

Mix all ingredients well in pot before bringing to fire.  Bring pot to fire and turn on high, stirring until syrup begins to boil.  Lower fire and stir until soft ball stage.  Takes about 15 minutes.  Never stop stirring, Syrup will curdle.  Allow syrup to cool.  Pour into syrup pitcher.  Refrigerate.  When ready to serve warm in microwave.  Add a small amount to a sauce pan along with slice bananas and heat.  Spoon sliced bananas onto pancakes and top with syrup.

Cheese Cake stuffed Pancakes

Use 2 homemade pancakes per person.  Spread layer of cheese cake filling between pancakes and top with sliced bananas and banana foster syrup.

Filling:

2 8oz bars cream cheese                              4 tbsp cool whip

4 tbsp sugar                                                  4 tbsp sour cream

Place all ingredients in blender or food processor and mix well.  Keeps well sealed in refrigerator for up to a week.
