Sugar Hill Maple Muffins

1 cup All Purpose Flour
1 cup Wheat Flour
1 Tbsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp each nutmeg and ginger
2 tbsp brown sugar

1/2 cup molasses
2 eggs-separated
3 tbsp melted butter
1 cup milk


  • preheat griddle to 375 degrees
  • mix dry together
  • mix wet together, except egg whites
  • add wet to dry, gently folding together
  • whip egg whites until stiff, fold into rest in two batches
  • cook on greased griddle until golden brown
  • serve with freshly whipped cream, powdered sugar and New Hampshire Maple Syrup
