3 medium baking potatoes, peeled and coarsely chopped 1 tsp. salt 4 Tbsp. butter 1/4 cup sour cream 2-4 Tbsp. heavy cream, half and half, or milk 1 tsp. finely minced garlic salt and pepper to taste In a medium saucepan, cook the potatoes in salted water until tender, about 15-20 minutes. Drain and return to saucepan. Add the butter, sour cream and garlic. Mash the potatoes until the ingredients are blended. Add the cream or milk, one tablespoon at a time, until the potatoes are the desired consistency. Add salt and pepper to taste. Serves 2-3 These are great served with that Thanksgiving turkey or Christmas prime rib. |
