Morning Glory Muffins

A favorite muffin at the B&B!

Ingredients

  • 2 cups flour
  • 1 1/4 cups sugar
  • 2 t. baking soda
  • 2 t. cinnamon
  • 3 eggs, beaten
  • 1 cup oil
  • 2 t. vanilla
  • 2 cups grated carrots
  • 1 apple, grated
  • 1/2 cup raisins
  • 1/2 cup chopped nuts
  • 1/2 cup coconut

Directions

Preheat oven to 375.  Grease muffins pans.  in a large bowl mix first 4 ingredients and set aside.  In a smaller bowl mix together eggs, oil and vanilla.  Add to flour mixture; stir until moist.  Fold in carrots, apple raisins, pecans and coconut.  Spoon into muffin pans.  Bake for 25-35 minutes.
