Quiche Lorraine

From 1902 TURNPIKE HOUSE BED & BREAKFAST

Ingredients

  • 3 pie crust (9 inch)
  • 1 1/2 cups bacon bits
  • 3 cups Swiss cheese -- shredded
  • 1 1/2 cups onion -- chopped
  • 10 egg
  • 4 cups whipping cream
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1/2 teaspoon cayenne pepper

Directions

Divide bacon, cheese and onion among the three pie crusts. Blend remaining ingredients and divide among pans. Sprinkle with hot paprika. Bake at 425 degrees for 20 minutes then reduce heat to 300 degrees. Cover with foil and continue to bake for 50 minutes, checking for browning and doneness.
