Pina Coloda Muffins

24-28 muffins

Ingredients

  • 1 Yellow box cake
  • 1 teaspoon rum extract
  • 1 teaspoon coconut extract
  • 1 8 oz can crushed pineapple - juice and all
  • 1 cup shreaded coconut
  • 1/2 cup chopped nuts (whatever you have on hand)

Directions

Follow the instructions on the back of the cake box.  Then add the rum and coconut extract, the can of pineapples, coconut and nuts.  Mix till blended and spray a muffin tin.  Fill about 3/4 full and bake for about 20 minutes.  You will smell them when they are ready.  They should be just slightly golden on top.  These need to be cooking in the oven if you ever want to sell your house!!
