Place 2 cups flour into mixing bowl. Add two cups milk in small increments while stirring to reduce lumps. Add eggs and almond extract and beat until smooth. I use saucer sized 6 inch cast iron skillets. Melt two tablespoons of butter in each skilled in 450 degree hot oven. When butter begins to brown in skillet, take out of oven and pour in ½ to ¾ cup of above mixture. Immediately place back into oven and bake approximately 6 minutes, or until edges of pastry are puffy and golden brown. Remove from skillet and serve pastry immediately on warmed plates with sliced fruit arranged in pastry. Dust with powdered sugar. Serve with maple syrup, rum pot, homemade whipped cream and bacon, sausage or ham. To make a more Polynesian dish, dust Hawaiian fruit with coconut.
