Fresh Apple Coffeecake

Homemade coffeecake is a part of every breakfast


  • 1 c. sugar
  • 3 eggs
  • 2 c. flour
  • 1 1/2 t. baking powder
  • 3/4 melted butter
  • 1/2 c. milk
  • 3/4 t. vanilla
  • 2-3 apples
  • 1/4 c. sugar
  • 1 1/2 t. cinnamon


Preheat oven to 375.
Spray baking pan with Pam.
In one bowl beat sugar and eggs lightly.
In another bowl mix flour and baking powder.
Add 1/3 flour, melted butter to sugar and egg mixture and stir; then add another 1/3 flour and stir; finally add milk, vanilla, and remaining flour until batter is smooth.
Pour into prepared pan.
Core and cut apples in to wedges or small chunks depending on the size of your pan. Place apples on top of batter with the rounded side up. Sprinkle with topping and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
Cool before serving.
Makes 12 servings.
