Red Velvet Pancakes

From CRANMORE MOUNTAIN LODGE BED AND BREAKFAST

Yield:

Recipe will yield at least 12, 4″ pancakes

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 6 T granulated sugar
  • 4 T unsweetened cocoa powder
  • 2 large eggs
  • 1-1/2 cups buttermilk
  • 1/2 cup sour cream
  • 2-3 T red food coloring
  • 4 tsp vanilla extract
  • 1/2 cup chocolate chips (more if you prefer extra chocolate-y)

Directions

Recipe will yield at least 12, 4″ pancakes.  Very easy to half (or double!).

Combine dry ingredients (flour, baking powder, baking soda, salt, sugar, and cocoa) in bowl and set aside.
Mix together wet ingredients in separate bowl until well combined.
Slowly add dry ingredients to wet.  Mix until JUST combined.  If you over mix this batter you will be left with dull, tough, and flat pancakes.
Add chocolate chips, again stirring until just combined.
Cook pancakes over med-high heat in a buttered griddle.  I used a heaping 1/3 cup for each pancake. NOTE:  I found that these pancakes burned very easily.  It may take you one or two tries to get the temperature just right.
Top with sifted powdered sugar (lots of it) and pure maple syrup.
