Baked Oatmeal

Yummy, warm and comforting this baked oatmeal is a favorite with our guests.  Many have said it tastes like an oatmeal cookie.

Ingredients

  • 1 cup Vegetable oil
  • 3 Large eggs, beaten
  • 4 1/2 tsp. Baking powder
  • 2 1/4 cups Milk
  • 1 1/2 cups Brown sugar
  • 6 cups QUICK oats
  • 3/4 cup Nuts (optional)
  • 2 cups Bite size fruit pieces (your choice)

Directions

In a large bowl mix: oil, brown sugar, and eggs.

In another large bowl, mix: oatmeal, baking powder, salt, nuts, fruit.

Add to the egg mixture.

Pour into a greased 9" X 13" baking pan and bake at 350 degrees F for 45 minutes or until set and golden brown.  Cut into squares and serve with milk or syrup if desired.

 

You can bake in individua greased ramekins if preferred.  Adjust baking time depending on the number of ramekins being baked at the same time.  

 

You can freeze this recipe in the 9 X 13 pan or individual ramekins before baking to use at a later date.
