Rock Cornish Hens Teriyaki

While we mainly serve a full breakfast at Charlie-Jane's B&B, there are special times when a guest will book all our rooms for a family reunion or other memorable get-to-gether in Mount Ayr.  Occasionally we will be requested to assist by providing additional meals.  This recipe is a result of such an event. (And, it's great for when the innkeeper's family is coming to visit.)

Rock Cornish Hens Teriyaki served on a bed of wildrice and vegetables.

Ingredients

  • 4 (one-pound) Rock Cornish Game Hens
  • 2 cups seasoned packaged croutons (or better if you make your own)
  • 1/4 cup butter, melted
  • 1/2 cup soy sauce
  • 1 clove garlic, crushed
  • 1/4 cup diced mandarin oranges

Directions

Begin by washing and patting dry all of your Rock Cornish Game Hens.  Mix together your croutons, butter and mandarin oranges.  Next, stuff the hens with the mixture of croutons, butter and mandarin organges.  Place hens on roasting pan and brush with a mixture of soy sauce and crushed garlic. Roast in pre-heated oven at 400 degrees for 40 to 60 minutes, being sure to baste with soy sauce and garlic mixture every 20 minutes. Once golden-brown, cover with foil.  Yield: 4 servings.

 

We like to accompany these tasty hens with a wild rice and vegetable combo.  Very Impressive!
