My personal favorite. A takeoff on the famous Lancaster County shoo-fly pie.
4 cup white flour
1 cup shortening (or butter or margarine)
2 cup sugar
Mix together (like pie crust) in a large bowl,
reserving half cup of crumbs for top of cake.
In another bowl, mix:
1 cup baking molasses (Brer Rabbit)
2 tsp. baking soda (level)
2 cups hot water
Stir until mixed and some of the foam disappears.
Add to the crumb mixture and stir lightly until blended.
Put in a 9 X 13 in. cake pan that has been greased and floured.
Put the 1/2 cup crumb mixture on top and bake for 50 minutes to one hour at 350 degrees.
