Luscious ripe figs are wonderful and making fig preserves ensures that you can enjoy them all year long. For a great holiday treat, pour preserves over a wheel of brie cheese. Heat for 1 minutes and serve with specialty crackers, Guaranteed to be a party favorite.
Wash & drain figs, handling carefully. Remove stems and cut figs in half. You will need 4 cups of cut figs.
Measure the sugar into a large mixing bowl. Wash lemons & grate zest from one of the lemons. Squeeze the lemons to get a scant 1/2 cup juice. Check expiration date on the pectin, making sure it has not expired.
Place figs, sugar, lemon zest, lemon juice and butter in large cooking pot. Using a potato masher gently mash some of the figs, leaving some chunks.
Bring this mixture to a rolling boil, one that cannot be stirred down. Continue to stir.
Add liquid pectin and return to a full rolling boil that cannot be stirred down. Boild for exactly one minute. Remove from heat.
Ladle the preserves into sterilized jars. Seal and process in a hot water bath according to canning instructions.
