Blue Corn Meal Pancakes

From
3/4 cup blue corm meal
3/4 cup white flour
2 tsp. baking powder
1/2 tsp salt
3 tblsp sugar
3/4 cup milk
3 eggs beaten
3 tblsp oil

Combine milk, eggs, and oil. Add to dry ingredients. Stir until smooth.

For lighter pancakes, separate egg whites. Beat until stiff and fold into batter.

Serves 5
