3 large eggs
Sift together flour, brown sugar, baking powder, nutmeg, cinnamon and salt into a mixing bowl and set aside. Beat whole eggs until thick. Add milk, melted butter and vanilla. Add the combined dry ingredients slowly. It should resemble pancake batter. If too thick, add a small amount more of milk.
Preheat waffle maker. Spray the surface with Pam or brush with melted butter. Ladle batter over hot surface and cook until, deep golden brown and crispy. Sprinkle with powdered sugar. Batter can be perpared the night before.
Yield: 6-8 square waffles
