4-5 medium unpeeled Red Bliss potatoes, washed and cubed
3 medium sweet Vidalia onions, chopped
1 teaspoon chopped fresh garlic.
Cayenne pepper to taste
1/2 cup low-sodium low fat chicken broth
1/2 cup combination of grated gouda and fontina cheeses
1 medium jalapeno pepper, chopped finely
Spray a covered microwaveable dish with Pam and add potatoes, onions, garlic and cayenne pepper. Add just enough chicken broth to cover the bottom of the dish. Cover and microwave for 20 minutes. Top with cheese and jalapeno. Cover and cook another 5 to 10 minutes, or until cheese is melted.
