Orange Souffle Pancakes
From PRANCING HORSE RETREAT BED & BREAKFAST
2 med eggs separated 1/3 cup of unbleached flour pinch of salt 3/4 cup of ricotta cheese 3/4 tsp baking powder 1 tsp sugar 1/3 cup of milk 1/2 tsp each of orange and grated lemon rind Beat egg whites until soft plates form. In a large bowl blend remaining ingredients. Fold in egg whites to the above. Use 1/4 cup measure & pour onto hot griddle. Enjoy! |
