Yields 2 Large Loaves
This delicious moist loaf is a favorite at Pike Lane Bed and Breakfast
Ingredients
3 Cups All Purpose Flour
2 tsp. Baking Soda
1/2 Cup Sour Cream
2 sticks of sweet butter (unsalted) (room temp)
2 1/2 Cups Sugar
4 Eggs (room temperature)
2 Cups generous cups of ripe bananas
2 tsp Vanilla
Salt
3 - 4 Cups semisweet chocolate chips. (This is a personal decision)
** Optional 1 tsp Pure Banana extract
Preparation
Preheat Oven to 350 degrees
Sift Flour 3 times and set aside
Blend baking Soda and Sour Cream and set aside
Cream the butter and sugar until light and fluffy
Add the eggs one at a tie
Beat well after each addition
Add the flour and sour cream mixture
Fold in mashed bananas and chocolate chips
Add vanilla and Salt
Place Batter in presprayed loaf pans and bake for 50 minutes
Check for doneness and then cover pans with aluminum foil and Bake 10 more minutes until an inserted skewer comes out clean. Do not over bake!!
These loaves refrigerate for a week and freeze beautifully!
