Date Nut PuddingFrom PATCHWORK QUILT COUNTRY INN
2 cups flour
5 tsp. baking powder
1/2 lb. dates
1 cup pecans
Combine these ingredients as listed in a blender and add
milk - just enough to make it the consistency of cake batter.
Blend slightly - do not over blend
In a sauce pan combine:
2 cups brown sugar
2 cups hot water
3 Tbl. butter
Boil together for 5 minutes and then pour into a 9 x 13 cake pan.
Dip the above batter into the juice and bake at 350 for 25 minutes.
Cut date pudding into small squares and layer it with whipped cream and serve.
