Apple Cheddar Quiche

Ingredients
6 apples, peeled, cored, and diced
3 tablespoons unsalted butter
2 partially baked 10" pie shells (baked until bottom begins to get golden), cooled
2 cups grated Cabot cheddar cheese
6 large eggs
4 egg yolks
1 cup cottage cheese
3 cups half & half
1/4 cup, or to taste, cinnamon sugar
Pinch of salt
Method
Preheat oven to 375°, with an oven rack in the lowest position. In a large skillet, saute the apples in the butter until slightly softened, 5-8 minutes. Place pie crusts on a cookie sheet. Place apples in the bottom of the cooled pie crusts. Top with the shredded cheddar cheese.
In a large bowl, beat together eggs, egg yolks, cottage cheese, and half & half. Pour this mixture over the two apple cheddar filled crusts. Sprinkle to taste with the cinnamon sugar and pinch of salt.
Bake on the cookie sheet until center is firm.
