Cluster Springs Egg Puff

Makes 6 to 8 servingsIngredients
- 10 large eggs
- ½ cup unbleached all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 (16 oz.) container small-curd low-fat cottage cheese
- 2 cups (8 oz.) grated low-fat (part-skim) mozzarella cheese
- 3 tablespoons canola oil
- 1 (4 oz.) can diced green chilies, drained
- Paprika, for garnish
Directions
Preheat oven to 350 F.
Spray a 9x 13-inch baking pan with nonstick cooking spray.
In a large bowl, beat eggs.
Thoroughly mix in the remaining ingredients; pour into pan. Sprinkle with paprika.
Bake for 35-40 minutes.
The dish can be made the night before, covered and refrigerated, then baked in the morning.
One and a half recipes fit into a 9x 13 pan but you need to add 5 minutes to the cooking time.
