Wild Maine Blueberry Lemon-Infused Buttermilk Pancake
From NOBLE HOUSE INNDirections
- Sift Together: 2 C. Flour, 2 T. Sugar, 2 t. Baking Powder, 1 t. Baking Soda, 1 t. Salt
- Stir Together: 2 Large Eggs, 2 C. Buttermilk, 2 t. Vanilla, 1 t. Lemon Extract
- Mix Dry & Wet Ingredients
- Pour ¼ C. of batter onto hot skillet or griddle & liberally sprinkle with wild Maine blueberries
- Cook until bubbles appear throughout & then flip for 2 more minutes
- Serve with Maine Maple Syrup
