NATIONAL HOTEL SIGNATURE BLACK BEAN SOUP

Ingredients

  • 5 OZ DRIED BLACK BEANS & 1 QT WATER
  • 2-3 PIECES CELERY (COARSELY CHOPPED)
  • 1/2 MED YELLOW ONION (COARSELY CHOPPED)
  • 2-3 STRIPS BACON
  • 2 OZ TOMATO SAUCE
  • 3/4 TSP CAYENNE PEPPER
  • 3/4 TSP WHITE PEPPER
  • 3/4 TSP ALLSPICE
  • 1 1/2 TSP BLACK PEPPER (TABLE GROUND)
  • 1/2 TBL BEEF BASE
  • 1/2 TBL GROUND GARLIC

Directions

BOIL THE FIRST FIVE ITEMS IN THE WATER FOR 1 1/2 HOURS. ADD LAST 5 ITEMS AND BOIL FOR ANOTHER 30 MINUTES. PUREE IN BLENDER OR FOOD PROCESSOR IN BATCHES, POUR INTO BOWLS AND GARNISH WITH SOUR CREAM.
