Ham, Spinach & Cheddar Egg CupsFrom THE MOUNTAIN ROSE INN BED & BREAKFAST

One of the most requested recipes here at the Inn - served with a rich cheddar cream sauce, it is gourmet comfort food at its best for breakfast!
- 12 thinly sliced pieces of VA ham
- 2 cups shredded sharp cheddar cheese
- 1 cup chopped fresh spinach
- 12 whole eggs
- to taste Cavendar's Greek Seasoning, Salt & Pepper
reheat oven to 350 degrees. Spray muffin tin with cooking spray.
Press a slice of ham into each muffin cup. Place spinach into each cup on top of the ham. Add in some cheese to each cup on top of the spinach. Crack an egg on top of each cup and season with greek seasoning, salt and pepper. Bake for 15-20 minutes or until done to what you prefer for eggs!
Remove ham egg cups from muffin tin and serve on a plate sprinkled with fresh herbs or chopped spinach & shredded cheese. YUM!
