Appalachian Trail Bran Muffins

Ingredients:

5 cups All Bran cereal, divided
2 cups boiling water
1 cup sugar
1 cup oil
1 cup molasses
1 cup buttermilk
4 eggs, beaten
5 cups, self-rising flour
2 1/2 tsp. baking soda
1 tsp. salt
1 cup raisins, nuts or diced cooked apples - optional

Instructions:

Preheat oven to 400 degrees.

In a small bowl, combine 2 cups cereal and boiling water. Mix well and set aside to cool.

In a large bowl, combine sugar, oil, molasses, buttermilk, beaten eggs and remaining 3 cups of cereal, mixing well after each addition.

In a separate bowl, combine flour, baking soda, and salt. Mix well.

Add flour mixture to buttermilk mixture and stir until well blended. Add cereal and boiling water mixture and blend well. If desired, mix in raisins, nuts or diced cooked apples.

Fill the cups of greased muffin tines 3/4 full with batter.

Bake for 15 to 20 minutes.
