Baked Eggs and Chives in Puff PastryFrom LUCILLE'S MOUNTAIN TOP INN & SPA

Yield:Makes nine servings
- 9 large eggs
- 1 sheet puff pastry, thawed (found in frozen food section)
- 1 cup grated Swiss Cheese
- 4 tablespoons fresh snipped chives
- Fresh ground black pepper
Preheat oven to 350 degrees. Spray muffin pan with non-stick cooking spray.
Cut the puff pastry into nine equal squares and place one in each of muffin pan cup.
Divide cheese among the nine pastries. Sprinkle the cheese with chives, a little pepper and dash of salt.
Crack open an egg into each square.
Bake 45 minutes, or until has puffed and egg is set.
This is also good substituting 3 tablespoons of sliced basil for the chives.
