Garden Vegetable Fritatta

Ingredients

  • 1 cup Zucchini, shredded
  • 1 cup Cherry Tomatoes, halved or quartered lengthwise
  • 1/2 cup Onion, chopped
  • 1/3 cup Grated Parmesan Cheese
  • 1 cup Milk
  • 1/2 cup Baking Mix
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 Large Eggs

Directions

Preheat oven to 400 degrees.  Lightly grease 6 - 8oz ramekins.  Sprinkle zucchini, tomato, onion and cheese evenly between the ramekins.  Stir together the remaining ingredients until well blended.  Pour over the vegetables and cheese in each ramekin.  

Bake uncovered 35 minutes or until the center is set.  Cool 5 minutes.
