Cinnamon Peach Bread

Makes 2 loaves

Ingredients

  • 3 cups flour
  • 1 1/8 cups white sugar
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon mace
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 peaches, chopped
  • 4 eggs
  • 1/2 cup packed brown sugar
  • 1/2 cup oil
  • 1/2 cup apple sauce
  •   Powdered sugar (optional)

Directions

Preheat oven to 350.
Grease two 4 ½ x 8 ½ inch loaf pans and line bottom with wax paper
In a large bowl combine flour, white sugar, cinnamon, mace, baking soda and salt. Set aside
In a food processor*, mince peaches, then add brown sugar and eggs and mix
Add oil and apple sauce and mix until well blended
Add peach mixture to flour mixture and stir until combined
Pour batter into prepared pans
Bake for 55 to 60 minutes until crisp on top edges
Sprinkle loaves with powdered sugar
Cool in pans for 10 minutes before removing and cutting
Sprinkle loaves with powdered sugar (optional)

*If you don't have a food processor, a mixer will do the trick!
