Applesauce MuffinsFrom MEADOWLAKE RANCH INN AND DUDE RANCH
Cooking Time:20 to 25 minutes
- 1 cup butter, softened
- 1 cup sugar
- 1 egg (we use the eggs from our chickens!)
- 1 cup applesauce
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp ground allspice
- pinch cloves
In a bowl, cream butter and sugar. Add eggs and vanilla; mix well.
Stir in applesauce. Combine the flour, baking soda and spices; stir into creamed mixture.
Fill greased or lined muffin cups 3/4 full. Bake at 350 degrees F for 20-25 minutes or until a toothpick comes out clean.
Cool for 5 minutes before removing from pan to wire rack.
Yield: Approximately 1 dozen
