Baked Vegan Doughnuts

20 mini's, or 10 regular doughnuts

My baked vegan doughuts are a delicious healthier alternative to a fried doughut. Being a vegan recipe, it will also work perfectly for those who are lactose intolerant or have egg allergies.

Vegan Baked Doughnuts

Ingredients

  • egg replacer for 1 egg, or 2Tbsp applesauce
  • 1/4 cup vegan butter
  • 1 cup of flour
  • 1/2 cup of sugar
  • 1 1/2tsp baking powder
  • 1/4tsp salt
  • 1/4tsp freshly grated nutmeg
  • dash of cinnamon
  • 1/2 cup non dairy milk
  • 1/2tsp apple cider vinegar
  • 1/2tsp vanilla

Directions

*Preheat oven to 350 degrees

*In a large bowl, combine the dry ingredients with a whisk to mix thoroughly. Combine the wet ingredients in a small saucepan over medium low heat and mix until butter is just melted. This mixture should be slightly warm to the touch.

*Add the wet mixture to the dry mix until just combined. It should form a very soft dough.

*Using a tablespoon scoop dough into an ungreased (I greased) nonstick doughnut pan. Smooth out the top of each doughnut-this will make for more even, prettier doughnuts, but isn't crucial.

*Bake for 12 minutes or so. They should not be browned on top, but a toothpick will come out clean.

*Release doughnuts to cool on a cooling rack. Allow to cool completely before decorating.

*Top with glaze, melted chocolate, sprinkles, or shake in a bag of powdered sugar, or a bag of a cinnamon sugar mixture.
