Ola's Oatmeal

Guest comming back to town for your Oatmeal? We hear that all the time - it's true!

Ingredients

  • 7 Cups Water
  • 1 Tsp Sea Salt
  • 3 Cups Old Fashioned Oatmeal
  • 3 Tbsp Butter
  • 1/3 cup Sugar

Directions

The Oatmeal recipe we use at The Inn is pretty straight forward, the trick is in the preparation. The story behind the recipe is that I was trying to recreate the taste of my grandpa Ola’s Oatmeal as I remembered it from growing up back in Norway, I remembered him pouring the oats into rapidly boiling water in an over-large pot on a very hot stove and then stirring rapidly with a whisk for quite a while. Trying that with our 2 gallon pot and a semi-pro large gas stove burner on full blast something surprising happened; after about 7 minutes of stirring hard (to keep it from boiling over) the consistency suddenly changed and the porridge became smooth and almost “stringy” and the flavor changed too. What actually happens is exactly what happens when you knead bread dough and how it suddenly changes consistency after 10-12 minutes.


Nam, nam,  nam!! As they say in Norway – Very, very good!

Bring Water and Salt to a rapid, rolling boil in 1.5 - 2 gallon pot.

 

Pour oats quickly into boiling water and let “foam” build to top of pot then start stirring rapidly and keep stirring for 7 minutes or until a stringy consistency appear (6-9 minutes dependent on brand).

 

Oatmeal can be served just like that, it is very good but, to make it even better add 3 tbsp of good butter and 1/3 cup of sugar and stir until butter is melted and sugar evenly divided. Serve with a little well of melted butter in the middle and drissled with sugar and cinnamon.
