Oatmeal Wheat Pancakes

From LOG HOUSE HOMESTEAD BED & BREAKFAST
(Makes 6 five inch pancakes)

Stir together in medium bowl:
1/2 cup unbleached white all purpose flour
1/4 cup stone ground, whole wheat flour
1/4 cup quick cooking oatmeal
1 Tablespoon sugar
1 Tablespoon baking powder
1/2 teaspoon salt

Whisk together and add:
3/4 cup skim milk
2 Tablespoons canola oil
1 egg or 2 egg whites

Stir well. Dip about 1/3 cup batter onto heated griddle. Cook till small bubbles appear on top, then turn over. Fry till lightly browned. Keep warm in oven on cookie sheet between layers of cloth towel till all are cooked. Serve warm with maple syrup and butter, also good with fried apples or strawberry jam instead of syrup.
