Apple Bread

From LOG HOUSE HOMESTEAD BED & BREAKFAST
(Makes two 7 ½ x 3 ½ loaves or 1 regular sized loaf)

2 cups chopped cooking apples (Lodi or Jonathan are good)
1 cup sugar

1 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/2 cup raisons
1/2 cup chopped nuts (optional)

1/2 cup vegetable oil
1 egg

Mix together the chopped apples and sugar, let stand an hour. Then mix together in another bowl the flour, baking soda, salt, spices, raisons and nuts. Mix together the oil and egg and add to apples. Add flour mixture into apple mixture and stir well. Pour into well greased pans. Bake for about 30 minutes or until toothpick inserted in center comes out clean. If making in l larger loaf pan, bake about 10 minutes longer. Serve warm or cold. Doubled recipe may be baked in a 9 x 13 cake pan for about 35 - 40 minutes.
