Hope's Banana Pecan Bread

From THE LAUREL OAK INN

Yield: 1 Loaf, serves 10-12 slices
Preparation Time: 20 minutes

Preheat oven to 350 degrees.

Mix together in a bowl:
2 1/2 c flour
3 t. baking powder
1/2 t. salt

Blend 3/4 c. pecans in BLENDER and add to the above mixture. Mix.

In the same BLENDER add:
1 c sugar
5 T. soft unsalted butter
1 egg
3 small ripe bananas
1/2 c milk

Add this mixture to the dry ingredients, until evenly moistened.
Bake at 350 in a greased loaf pan for one hour or until a tester comes out clean.

At the Laurel Oak Inn, we serve it fried. We spread a slice with plenty of butter and grill it on a griddle or in a pan until it’s browned. Yummy!
