Oatmeal-Pecan Pancakes
From THE LAUREL OAK INN1 c. Unbleached Flour
2 T. Brown Sugar
3 tsp. Baking Powder
¼ tsp. Ground Cinnamon
¼ tsp. Salt
½ c. Chopped Pecans
Mix thoroughly in large bowl. (Save some pecan halves for a surprise in the pancake. Stick one half in the center just before turning.)
2 Eggs, whisk with fork
1½ c. Milk (Can be half buttermilk)
2 T. Melted Unsalted Butter
Fold ingredients into dry mixture. Mix thoroughly. Allow 10 minutes to "rest". Mixture may become "dry". Add a small amount of milk. Do not make it "runny".
4 T.(½ stick) Unsalted butter
¾ c. Light Brown Sugar
1 c. Orange Juice
½ tsp. Orange Zest
Melt butter and brown sugar together over low heat. Add orange juice and zest. Mix. Serve in small pitcher.
Use medium ladle (¼ c.) to drop batter on hot seasoned griddle.
Grill pancakes. As bubbles form (just before flipping), sneak a pecan half into the middle and flip.
Serve with warm sauce. Garnish with orange slice, cut and twisted.
Serves four. This can easily be "halved" for just the two of you. Enjoy!
