Banana Praline Muffins

From LAS BRISAS FARM
yields 12 muffins
Preheat oven to 400 degrees

3 bananas, ripe - mashed
1 egg
1/2 C. sugar
1/4 C. oil
1 1/4 C. flour
2 t. baking powder
1/4 t. salt

Praline:
3 T. brown sugar
1 T. sour cream
1/2 C. chopped pecans

Mix brown sugar and sour cream, add pecans.
Mash bananas; add egg, sugar and oil. Beat well. Add flour, baking powder and salt and mix until just moistened.
Grease muffin tins, and put equal amount of batter in each. Top each with equal amount of praline mix in center of muffin.
Bake for 15 minutes or until golden brown.
