Pineapple Zucchini Bread

Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 t vanilla
  • 2 cups shredded zucchini
  • 1 can (8 1/4) crushed pineapple, drained
  • 3 cups flour
  • 2 t baking soda
  • 1 t salt
  • 1/4 t baking powder
  • 1 1/2 t cinnamon
  • 3/4 t nutmeg
  • 1 cup currants or raisins
  • 1 cup chopped walnuts

Directions

Beat: eggs, oil, sugar, vanilla until thick.

 

Stir in and blend well remaining ingredients.

 

Pour into 2 greased 5x9 loaf pans.

 

Bake a 350 degrees for 1 hour.
