Pineapple Zucchini Bread
From LAKESHORE LANDINGIngredients
- 3 eggs
- 1 cup oil
- 2 cups sugar
- 2 t vanilla
- 2 cups shredded zucchini
- 1 can (8 1/4) crushed pineapple, drained
- 3 cups flour
- 2 t baking soda
- 1 t salt
- 1/4 t baking powder
- 1 1/2 t cinnamon
- 3/4 t nutmeg
- 1 cup currants or raisins
- 1 cup chopped walnuts
Directions
Beat: eggs, oil, sugar, vanilla until thick.
Stir in and blend well remaining ingredients.
Pour into 2 greased 5x9 loaf pans.
Bake a 350 degrees for 1 hour.
