White Chip Macadamia Coconut Crisps

Ingredients:

1 2/3 cups all purpose flour
3/4 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 sticks softened butter
3/4 cup packed dark brown sugar
1/3 cup white sugar
1 tablespoon pure vanilla extract
1 large egg
2 cups white chocolate chips
1 cup shredded coconut
3/4 cup chopped macadamia nuts

Directions:

Cream butter and sugars on medium speed until fluffy. Add egg and vanilla and beat until smooth (the color should become lighter as it gets fluffier). Add flour, soda, salt & baking powder and mix until just combined. Add chips, coconut and nuts until combined. Drop on parchment or Silpat lined baking sheet in 325 degree oven (310 convection)for about 12-14 minutes until just slightly brown. Cookies become crispier as they cool. For a chewier cookie, decrease cooking time by about 2 minutes; crispier, increase by about 2 minutes. Either way - enjoy!
