Armadillo Eggs (appetizer)From KELUMAC CHRISTMAS TREE FARM BED AND BREAKFAST

Medium Hot and Spicy Appetizer
- 2 10 count can biscuits
- 10 whole jalapeños (canned or try fresh)
- 1 (16 oz. pkg.) Owens sausage or equivalent
- ½- ¾ lb Grated cheddar or Monterey Jack
Slice the jalapeños lengthwise and remove seeds.
Stuff the jalapeños with grated cheese.
Wrap sausage completely around the pepper stuffed with cheese. Roll out biscuits and wrap it around the sausage. Repeat until all are used.
Bake at 400o for about 10- 12 minutes. Makes 20 appetizers
