Cheese Baked Eggs
From THE JOHN F. CRAIG HOUSE BED & BREAKFAST
For each serving:
1 teaspoon butter
1 tablespoon milk or cream
1 extra large egg
salt and pepper
grated cheese (Monterey Jack)

grated cheese (Monterey Jack)
Grease 3 1/2 oz. ramekins or muffin tins. Layer butter, milk, then egg, then salt and pepper. Sprinkle with cheese. Bake at 350 degrees for about 10 - 15 minutes. Remove from oven and allow to sit for 1 minute. Serve on english muffin half, sprinkle with paprika. (Parsley and grape tomatoes make a nice garnish).
This is great for 2 or 24 servings. You are only limited by how many muffin tins you have.
