Zucchini Quick Bread

From Jeanette's Kitchen

Makes 2 Large Loaves or 5 Small Loaves

3 eggs
1 cup honey
1 cup brown sugar
3 teaspoon vanilla
1 cop Wesson Oil
2 cups shredded zucchini
2 1/2 cups flour
1 teaspoon cinnamon
1/4 teaspoon baking powder
1 teaspoon salt
1 cup chopped nuts

Preheat oven to 350
Beat eggs until light and fluffy
Add honey, brown sugar, vanilla, oil, and blend well
Stir in squash
Add flour, baking powder, salt, and cinnamon to above mixture
Fold in nuts
Pour in greased loaf pans
Bake for 45 minutes to 1 hour until done
