Rachael's Rich Banana Bread
From IRVING HOUSE AT HARVARDPreheat oven to 350 degrees
Grease 4 small loaf pans
Beat together in a big bowl:
- 7 overripe bananas
- 1 cup melted butter
- 4 eggs
- 1 cup brown sugar
- 1 1/2 cups white sugar
- 1 cup ricotta cheese
- 2 tsp. vanilla
Sift together and stir in:
- 4 cups flour
- 5 tsp. baking powder
- 2 tsp. salt
- 2 tsp. baking soda
- 2 tsp. ground ginger
- 1 tsp. cinnamon
- 1 tsp. nutmeg
Pour into greased pans
Bake 35 minutes @ 350 degrees
Then, bake 30 minutes @ 300 degrees until golden brown.
Serve warm with butter.
