Mexican Frittata





5 eggs beaten
1/4 cup flour
1 (4 oz) can chopped green chiles
8 oz cottage cheese
2 T melted butter
1/2 tsp baking powder
2 cups shredded Monterey Jack cheese or (Fiesta Blend) cheese


Preheat oven to 400 degrees. Combine eggs, flour, cottage cheese, chiles in mixing bowl, beat well at medium speed with electric mixer. Stir in remaining ingredients and pour into well greased 9 inch pie plate. Bake 10 min. at 400, then reduce to 350 for 20 - 22 minutes - until set. (I take it out for a few minutes for the cheese to set a little before cutting) - cut into wedges - serves 6 can be made night before and baked in the morning.
