Texas Pookie Muffins

24 muffinsIngredients
- 2 teasp baking soda
- 1/2 teasp salt
- 2 teasp ground cinnamon
- 3 eggs
- 1/2 cup sugar
- 1/2 cup buttermilk
- 1 teasp vanilla
- 1/2 cup oil
- 1 1/2 cup grated carrots
- 1 1/2 cup grated apples
- 1 cup white flour
- 1 cup whole wheat flour
- 1/2 cup chopped dates
- 1/2 cup chopped walnuts
Directions
(Pookie is a term of endearment for children in Texas, where I lived and raised my family of six children)
Sift together:
1 cup white flour
1 cup whole wheat flour
2 teasp. baking soda
1/2 teasp. salt
2 teasp. ground cinnamon
Beat:
3 eggs
Add:
1/2 cup sugar
1/2 cup buttermilk
1 teasp. vanilla
1/2 cup oil
Blend 1/2 dry ingredients into:
1 1/2 cup grated carrots
1 1/2 cup grated apples
1/2 cup grated coconut
1/2 cup chopped dates
1/2 cup chopped walnuts
Add egg mixture and other half of dry ingredients. Stir until blended. Do not overmix. Spoon batter into greased muffin pan, or line with paper muffin cups. Bake 375 degrees 25 minutes. Remove from the oven when they “spring back” and are golden brown. Let cool on a wire rack for a few minutes before serving. They freeze well.
