Eggs Florentine

9 Eggs 2 Cups of Cottage Cheese 2 Cups of grated Swiss Cheese 1 Cup of Feta Cheese 4 Tablespoons of melted butter 1 package of frozen spinach, thawed and drained (it is a good idea to squeeze the water out with your hands) 1 Teaspoon nutmeg In a large bowl beat the eggs slightly and add the cheeses and butter. Mix well, stir in the spinach and the nutmeg. Spray the baking dish with Pam cooking spray. Pour egg mixture into dish and bake in a 350 degree oven for 1 hour or until a knife inserted in the center comes out clean. Use one large Pyrex dish ( about 9" x 13" ) for 10 servings |
