Rice PancakesFrom THE HARKINS HOUSE INN
Prep Time:5 minutes if the rice is already cooked
Cooking Time:5 minutes
Surprisingly rice makes these pancakes very moist and tasty!
- 1 cup cooked rice (can be left over)
- 1 cup flour
- 1 cup milk
- 2 tsp. baking powder
- 1 egg
- 1 pinch of salt
Mix all ingredients together but don't overbeat. Let sit 5 minutes to rest. Grease griddle & pre-heat. Pour 1/3 cup batter for each pancake and cook each side until golden. Enjoy with butter and warm syrup!
