Grand Anne Egg Casserole
From THE GRAND ANNE BED & BREAKFASTYield:
Serves 4-6 peopleIngredients
- 5 beaten eggs
- 1 cup small curd cottage cheese
- ¼ cup melted and cooled butter
- 1 (4 Oz) can diced chopped green chilies
- ¼ cup all purpose flour
- ½ teaspoon baking powder
- 2 cups grated/shredded Colby jack cheese
Directions
Mix the 1st 6 ingredients together and then add 2 cups grated/shredded Colby jack cheese
Pour above mixture into olive oil sprayed nine inch square baking dish. Sprinkle top of mixture with cayenne pepper, black pepper, onion powder, garlic powder and parsley flakes and bake in 350 degree oven until lightly browned on top and center is puffed and firm.
