3/4 cup Swiss cheese shredded 3/4 cup Cheddar cheese shredded 3/4 cup Mozzarella cheese shredded 6 eggs 1 cup half and half 3/4 cup skim or whole milk 2 tablespoons finely diced onion 1 tablespoon flour 1/2 teaspoon salt 1 9" pie crust Preheat oven and then bake pie crust for 5 minutes. In a large bowl, whisk all ingredients together. Pour mixture into the crust. Bake as specified or until knife inserted near center comes out clean. Top with more grated cheese, if desired. Slice into wedges and serve. Try this recipe with sautéed mushrooms.
