Spinach Mushroom Frittata

Ingredients

  • 1 cup spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 onion diced
  • 1 red pepper diced
  • 1 yellow pepper diced
  • 10 eggs
  • 2 cups mozzarella cheese
  •   garlic powder
  •   salt and pepper
  • 5 cups shredded potatoes, or frozen hash browns
  • 2 cups cheddar cheese

Directions

A delicious, vegetarian-friendly start to the day!

Preheat oven to 350 degrees.
Saute onion and peppers in olive oil. Add shredded potatoes. Cover and cook until golden. Set aside. In a large bowl, whisk together eggs, spices, and cheese. Add spinach, mushrooms and potatoes.
Put into two greased 10 inch pie dishes. Bake 45 - 60 minutes.
